Boise

This past weekend my family (minus 1 brother and family) headed up to Boise to my cousin's wedding. We had so much fun spending time with each other, my siblings, and cousins! We figured out that between aunt, uncles, cousins, and a great aunt, the Stagg family had 9 rooms at the same hotel. Good thing it didn't burn down or we would be missing a huge hunk of the family...

On Friday my sister, my parents and Craig and I went to Toy Story 3 - loved it! Saturday was Cody and Brad's big day. Here are a few pictures:

Wasatch Back 2010

Craig ran in the Ragnar relay with Chris, Jill and some of their friends and had a blast. I volunteered at Snow Basin on Friday night and had tons of fun, but wished I could have seen the team - they passed the Snow Basin exchange a few hours before I got there. Here are a few pictures from the race.

After the race. Craig finished his legs at about 9 am on Saturday and I met him in Park City. He sure looks good after 3 hours of sleep and 15 miles!
Team Swassnar after finishing - they ended up running the 188 miles in about 32 hours. I'm hoping that I can run next year. Seeing all of the runners gave me some motivation! Maybe next time, I'll take some pictures during the race too!

Memorial Day Weekend

We had a great Memorial Day weekend with lots of food and family. On Saturday, lucky Craig was taking a practice LSAT while I went to the Cemetery with my parents. I guess the youngest still gets dragged along :).

Sunday, we had a barbeque with Craig's family with great food! I made an Asian pasta salad filled with tons of vegetables. Craig, his brothers, and our nephew played soccer.

On Monday, I headed to my parent's house. Poor Craig was at school all day, getting the newspaper ready to publish (yes...he is the sport's editor for the school newspaper. Kind of nerdy - I guess I rubbed off on him a little.) More yummy food and fun with nieces and nephew. We are so lucky to live close to our families and love spending time with them. We will sure miss them if we go away to Law School!

Cooking Experiments

I have been seeing quite a few patients lately with gluten intolerances because of Celiac Disease and they ask if I have any tips for cooking gluten-free. The fact is that I don't ever cook gluten-free because I don't have to! I decided to purchase (well, my mom paid for it...) some gluten-free flour and try some easy recipes and replace wheat flour with the gluten-free stuff.



First experiment: Gluten-free pancakes! They look just like regular pancakes. I thought they would be really flat, so I added a little extra baking powder and they were nice and fluffy!

Success! Craig liked them. They had a slightly gritty texture and different taste (from the rice flour), but I would eat them again. Maybe I'll try a more risky recipe next time!
